LOBSTER Begin by removing the meat from the lobsters, try to maintain the shape of the claws so they look nice on top of the toast. Slice the meat from the tail. FRESH DILL MAYONNAISE Mix the mayonnaise with lemon zest and juice, add finely chopped dill (reserve a few sprigs of dill for garnish). Season to taste with salt and pepper. Everything up to this point can be prepared ahead and kept cool.

TOASTS: Preheat a frying pan over medium heat. Take some light bread and, if you like, cut out some suitable shapes with cookie cutters. Fry the bread slices in butter on both sides, turning them a few times so that both sides absorb the butter. Finish when the bread has developed a nice, fried surface.

ASSEMBLY Arrange all the bread slices on a tray, dollop the dill mayonnaise on top, and neatly distribute the lobster meat over them. Finish each with a sprig of dill and, if desired, a few drops of lemon juice. If the toast is to be served as an appetizer, you might like to start with a few simple salad leaves underneath each toast on the plate.
