Heat a frying pan over medium heat and peel the potatoes, then dice them into approximately 0.8 x 0.8 inch cubes. Optionally, rinse the potato cubes in cold water to remove the surface starch and prevent them from sticking together too much (though this is not absolutely necessary). Add the butter, or another type of cooking fat, to the frying pan, then place the potatoes in the pan and spread them out with a spatula.
