Begin by mixing water, vinegar, sugar, salt, coarsely crushed white pepper, and parsley in a bowl. Stir until the sugar has dissolved and set aside. Thinly slice the cucumber with a cheese slicer, then place the cucumber slices in a jar and pour the pickling liquid over them. Put a lid on the jar and gently mix or shake, being careful not to break the slices. It's okay if the liquid doesn't completely cover the cucumber slices.
