Begin by preheating the oven to 225 degrees Celsius, using the convection setting if available. Coarsely grate the halloumi while that's heating, and mix with roughly chopped mint leaves. Then, split the zucchini lengthwise and scoop out the seeds from the middle with a spoon to create a "trough" where the cheese can be placed.
Zucchini Halloumi Mint
Grease an ovenproof dish, place the zucchini halves in it, and season with paprika, salt, and pepper. Then fill the zucchini halves with the grated halloumi mixture, drizzle a few drops of olive oil over the cheese, and place the dish in the middle of the oven.
